Roasted Zucchini

Bring summer to your oven with this easy roasted zucchini recipe! Eat it as a side or eat it in a sandwich, the options are endless! 



Ingredients:

  • 2 pounds zucchini
  • 1 tbsp olive oil
  • 1 teaspoon garlic salt 
  • 1/2 teaspoon ground black pepper 
  • 1/2 cup parmesan cheese 

Directions:
  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Wash and dry each zucchini. Trim off the ends and cut into 1/2 inch thick semi-rounds. 
  3. Season the zucchini with olive oil, garlic salt, pepper and parmesan cheese. Toss until evenly distributed. 
  4. Place in a single layer on a baking sheet. Roast for 10-12 minutes.
