Roasted Sweet Potatoes

These are delicious on its own or topped with your favorite toppings! It's also delicious with steamed milk for a sweet potato latte or mashed into your next cake batch! If you are short on time, cut the potatoes in half and bake them for half the time! 


Ingredients:

  • sweet potatoes, cleaned 

Directions

1. Preheat an oven to 400F

2. While the oven is preheating, using a fork, stab the potatoes lightly just enough to puncture the surface. This will let steam escape during the cooking process.

3. Place prepared sweet potatoes onto a baking sheet lined with parchment paper to prevent sticking. Bake for 50-60minutes or until the skin is puffed up and you can easily pierce them with a toothpick or fork.
