So I learned that Shepherd's pie is made with lamb usually, and when ground beef is used, it's called Cottage pie. So, here is our Cottage pie recipe
Makes 1 8x8 pan
Ingredients:
- 2 ½ cups mashed potatoes (leftover or fresh)
- 2 tbsp oil
- 1 cup diced yellow onion
- 1 lb lean ground beef
- 2 tsp dried parsley
- 1 tsp dried thyme
- ½ tsp salt
- ½ tsp ground black pepper
- 1 tbsp Worcestershire sauce
- 3 cloves garlic; minced
- 2 tbsp tomato paste
- 1 cup beef broth
- 1 cup frozen peas & carrots
- Optional: shredded cheese of choice

Directions:
1. In a pan, heat up oil. Then add in diced onion, cook until slightly softened. Add garlic.
2. When onion and garlic are cooked, add in ground beef, and break beef into pieces
3. Add in rest of ingredients (except mashed potato)
4. Cover and cook for 20 minutes, or until liquid is almost fully absorbed
5. Preheat oven to 375F
6. In an 8 in. pan, layer cooked beef evenly. Then top with mashed potatoes

7. Bake at 375 F for 20 minutes, or when parts of mashed potato look golden
8. Optional: top with your favorite shredded cheese, bake for 5-10 additional minutes or until cheese is fully melted
