I would much prefer to add eggs, but there's a picky eater who hates eggs at home. You can add eggs before adding the rice, when eggs are almost fully cooked.

Ingredients:
Sauce:
- 1 tbsp soy sauce
- 2 tbsp oyster sauce
- ½ tsp sugar
- ¼ tsp white pepper
Rice
- 1 tbsp oil
- ½ small onion
- 2 garlic cloves
- 8 oz ground beef
- ¾ cup diced carrots
- 1 ½ cup overnight rice
- 1 stem scallion; chopped
Ingredients:
1. Mix sauce ingredients together and set aside.
2. In a wok or pan, heat up oil, and sauce onion until tender, add in garlic
3. When fragrant, add in ground beef. Break into pieces
4. Add half of sauce into beef. Mix well then add in carrots
5. Add in rice, mix well. And add in the rest of the sauce
6. Cook and mix until well blended
7. Lastly add in scallion
