Hash Browns

 Makes 6

Ingredients: 

  • 2 medium potatoes
  • 1 egg
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp corn starch

Directions:

1. Cut both potatoes in half and boil for 10 minutes (do not boil for longer)

2. Drain and let cool

3. Shred potatoes, or dice into tiny cubes, place into a bowl and mix in rest of ingredients

4. Shape mixture into desired size and shape, place in a lined tray, and freeze for at least 30 minutes

5. Heat up about ¼ in. of oil in a pot. Fry over medium-low heat until golden brown.
