Makes ~6 cups
Ingredients:
- 4 cups oats (old fashioned rolled or instant)
- 1 cup raw pecans
- 1 teaspoon cinnamon
- 1/2 cup olive oil
- 1/4 cup honey
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- Optional: 1/2 cup chocolate chips
Directions:
1. Preheat oven to 350F.
2. In a large mixing bowl, combine all ingredients (except chocolate chips if using)
3. On a lined baking sheet with parchment paper, add oat mixture. Bake in oven for about 30 minutes are until golden brown
4. Once done baking, completely cool down before storing in an air tight container or ziplock bag. For extra sweetness, mix in 1/2 cup bittersweet or semi-sweet chocolate chips
