This Pork and Onion Stamina Bowl is easy yet hearty!
Makes about 2-3 servings
Ingredients:
- 1/2 lb pork belly slices
- one medium onion, sliced
- cooking oil
- 2 garlic cloves, peeled, minced
- 1/2 teaspoon hon dashi
- 1 teaspoon sweet soy sauce
- 1 teaspoon white miso
- 1 teaspoon mirin
- 1 teaspoon sake
- 1 tablespoon water
- ground black pepper to taste
Directions:
1. In a medium sized bowl, mix together garlic, hon dashi, soy sauce, miso, mirin, sake and water. Pour mixture over pork belly to marinate.
2. Add cooking oil to a heated skillet/cooking pan. Cook onions until they are translucent, and set them aside to let cool.
3. In the same skillet/cooking pan with remaining oil, cook pork belly until thoroughly cooked. Once cooked, toss in cooked onions and season to taste with black ground pepper.
4. Serve over hot rice. If desired, serve a sunny-side egg atop.
