Corn Casserole

Makes 3 servings

Ingredients:

  • 4 tbsp butter (1/2 stick)
  • 2 tbsp all-purpose flour
  • 1 whole egg
  • 1 egg white
  • ¾ cup milk
  • 1 (14.75 oz) can creamed-style sweet corn
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp garlic powder
  • ¼ cup shredded mozzarella cheese 

Directions:

1. Preheat oven to 350F

2. Beat egg and egg white in small bowl and set aside

3. In a sauce pan, melt butter over low-medium heat. When melted, stir in flour. 

4. Slowly add in milk, stirring constantly until well mixed and thick. Remove from heat.

5. Add in corn, salt, black pepper and garlic.

6. Mix in beaten eggs, stirring constantly

7. Pour into a small pan (8x4in)

8. Bake at 350F uncovered for 45 minutes

9. Top with cheese, bake for another 15 minutes
