Tiramisu

Makes about one pound cake-sized loaf  or a 13 x 9 inch baking dish 


Ingredients:

  • 6 egg yolks
  • 3 tablespoons white granulated sugar
  • 1 pound marscapone cheese
  • 2 teaspoons rum (optional) 
  • 24 packaged ladyfingers
  • 1 1/2cups espresso or strong coffee, cooled
  • additional cocoa powder or coffee powder for dusting 


Directions: 
  1. Beat eggs and sugar until pale yellow (~about 5 min with electric whisk or ~10min by hand)
  2. Add marscapone cheese, 1 tablespoon of cooled espresso, and rum. Beat until smooth and thoroughly combined.
  3. Pour remaining espresso into a shallow dish to dip each ladyfinger cookie on one side only. Soaking ladyfingers too long or on both sides will make them too soft and soggy. Arrange soaked ladyfingers in one layer of desired dish. Layer with cream mixture. 
  4. After arranging as desires (multiple layers of ladyfingers and cream or single layer), dust a mixture of cocoa and coffee powder on top. Refrigerate for at least 4 hours before serving. 

NOTE:
  • this recipe contains RAW egg yolks and alcohol. Please avoid if pregnant.
