When you have left-over brewed coffee and also have a sweet tooth, these brownies are a great idea!

- ½ cup unsalted butter
- 1 cup semi-sweet chocolate
- 3/4 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/3 cup brewed coffee
- ¾ cup all-purpose flour
- 1 tbsp cocoa powder
- ¼ tsp salt
- ¼ cup white chocolate chips, if desired
- Additional white chocolate chips, if desired
Directions:
- Melt butter and semi-sweet chocolate in saucepan, over low-medium heat, stirring constantly
- Let melted chocolate cool completely
- Preheat oven to 350F
- Whisk sugar into cooled melted chocolate. Then, add in eggs 1 at a time, mixing well after each
- Mix in brewed coffee and vanilla extract
- Mix in flour, cocoa powder, and salt, until completely incorporated
- Stir in white chocolate chips, if desired
- Pour batter into lined 9 in. square pan
- Bake at 350F for 35 minutes, cake tester should come out clean
- Let brownies cool completely before cutting
