Makes ~30 mini muffins
Ingredients:
- 2 medium carrots, shredded
- 2 small sweet potatoes, shredded
- 2 cups all purpose flour
- 2/3 cup brown sugar, packed
- 2 tsp baking soda
- 1/2 tsp ground ginger
- 1/2 tsp salt
- 2 tsp cinnamon
- 1 medium apple, diced
- 3 large eggs
- 2/3 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup orange juice
Directions:
- Pre-heat oven at 375F.
- In a large mixing bowl, mix together dry ingredients (flour, sugar, baking soda, ginger, salt and cinnamon). Mix in carrots, sweet potato and apple until evenly coated.
- In another mixing bowl, combine wet ingredients (eggs, oil, vanilla, orange juice).
- Slowly combine dry ingredients with wet ingredients until thoroughly combined.
- Bake in oven at 375F for about 23-25min.
