Sweet Potato Carrot Muffins

 Makes ~30 mini muffins

Ingredients:


  • 2 medium carrots, shredded 
  • 2 small sweet potatoes, shredded
  • 2 cups all purpose flour
  • 2/3 cup brown sugar, packed
  • 2 tsp baking soda
  • 1/2 tsp ground ginger
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1 medium apple, diced
  • 3 large eggs
  • 2/3 cup vegetable oil 
  • 2 tsp vanilla extract
  • 1 cup orange juice
Directions: 
  1. Pre-heat oven at 375F. 
  2. In a large mixing bowl, mix together dry ingredients (flour, sugar, baking soda, ginger, salt and cinnamon). Mix in carrots, sweet potato and apple until evenly coated.
  3. In another mixing bowl, combine wet ingredients (eggs, oil, vanilla, orange juice).
  4. Slowly combine dry ingredients with wet ingredients until thoroughly combined. 
  5. Bake in oven at 375F for about 23-25min.
