Here's another leftover ham recipe!
Ingredients:
- 2 3/4 cup all purpose flour
- 1/3 cup granulated sugar + extra for sprinkling
- 3/4 tsp salt
- 1 tbsp baking powder
- 8 tbsp unsalted butter, cold
- 8 oz ham, diced
- 8 oz gouda cheese, shredded
- 2 large eggs
- 2 tsp vanilla extract
- 1/2 to 2/3 cup half and half
- 1 cup scallion, chopped
Directions:
1. In a large bowl, whisk together flour, sugar, salt and baking powder.
2. Combine with cold butter just until mixture is unevenly crumbly. Mix in scallion, ham and cheese.
3. In another bowl, whisk together eggs, vanilla and 1/2 cup of half and half. Add wet ingredients to dry ingredients.
4. Stir ingredients until a dough is formed when all the ingredients are just moistened. If it is still too dry, keep adding 1 tsp of half and half. Place 1/4 cup amount of dough onto baking sheet lined with with parchment paper. Repeat until all dough is used. Sprinkle with sugar.
5. Bake scones 18-24 minutes at 425F or until golden brown. Serve warm.
