Basque Burnt Cheesecake

 Makes one 6-inch cake 

Ingredients:

  • 1 lb cream cheese (two 8oz packages)
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • 270 g heavy cream
  • 3 eggs
  • 120 g sugar
  • 20 g cake flour 


Tip: Ensure cream cheese is softened to room temperature prior to use or heat for 10 seconds in a microwave-safe dish. 



Directions:

1. Preheat oven to 465 degrees Fahrenheit and line a 6-inch cake pan with parchment paper. In a mixing bowl, combine together cream cheese and sugar until smooth. 

 

2. Add eggs one at a time and beat until smooth. Add vanilla extract and lemon juice and mix thoroughly. 

        

3. In a separate bowl, add flour. Slowly mix in cream until smooth and thoroughly combined. 

                                   

4.    Mix cream-flour mixture into cream cheese mixture. Mix until thoroughly combined. Pour combined mixture into lined pan and bake for about 30 minutes at 465F. Once baked, let completely cool to set.
