Leftover Ham Potato Soup

 If you have leftover ham from holiday dinner, use them to make this hearty soup! 


Makes ~3 quarts


Ingredients:

  • 2 medium potatoes; peel and diced
  • 1 1/2 to 2 cups leftover ham; diced
  • 1 medium onion; diced
  • 3 tbsp all-purpose flour
  • 3 cups milk
  • 1 ½ cup shredded cheddar cheese
  • 1 cup water, or to desired thickness
  • black pepper to taste
  • salt to taste


Directions:

1. Boil diced potatoes for 15 minutes. Reserve 1 cup of potato water and put in blender with ½ cup of boiled potatoes. Set aside rest of potatoes

2. Mix potato water, all-purpose flour, and milk. Set aside. 

3. In a pot, heat up some oil, sauté onions until tender. Add in cooked ham.

4. When ham is heated, stir in milk mixture. Over low heat, stir until thickened and bring to a boil. 

5. Stir in cheddar cheese until melted and well blended

6. Add 1 cup of water or until desired thickness achieved

7. Mix in salt and pepper to taste
