Makes 3 Servings

- 2 tbsp butter
- 1 small onion; diced
- 2 garlic cloves; minced
- 2 tbsp flour
- 1 cup milk
- ½ cup vegetable broth
- ¼ cup tsp salt
- 1/8 tsp pepper
- 3 small-medium potatoes
Directions:
1. Preheat oven to 350F
2. In a sauce pan, melt butter and sauté onion and garlic over medium heat, until tender

3. Add flour, stir until well combined

4. Lower heat, slowly add in milk and broth a little at a time, stirring constantly, until thick sauce forms

5. Add in salt and pepper
6. Lightly grease an 8in pan, layer potatoes and sauce, alternating

7. Cover and bake for 45 mins at 350F
8. Uncover, return to oven, and increase temperature to 375F, for additional 30 mins
