Prepare for winter with another soup recipe!
3 servings

- 3 tbsp butter; divided
- ¼ onion; diced
- 4 cloves garlic; minced
- ¾ tsp dried oregano
- ½ tsp dried thyme
- ¼ tsp basil
- ¼ tsp red pepper flakes
- ¼ tsp black pepper
- 1 tsp salt
- 1½ tbsp all-purpose flour
- 1½ cup chicken broth
- 1 (14 oz) can diced tomato
- ½ cup tomato paste
- 2 cups tortellini
- ¼ cup grated parmesan
- ½ cup milk
- Optional garnish: basil, additional grated parmesan
Directions:
1. In a pot, melt 2 tbsp butter, add onion and cook over medium heat until translucent.
2. Add in garlic and the rest of the seasoning
3. Add 1 tbsp butter, stir until melted
4. Whisk in flour until well combined
5. Slowly add in broth, tomato paste, stirring consistently
6. Add tortellini. Lower heat, stir in milk and grated parmesan
7. Garnish with basil and additional grated parmesan, if desired
