Korean Glass Noodles (Japchae)
Makes 4 servings Ingredients:- 4 oz sweet potato starch noodles (dangmyeon)
- 4 oz spinach
- 4 oz carrots, julienned
- 3 garlic cloves, minced
- 1 medium onion, sliced
- 4-5 dried shiitake mushrooms, rehydrated, sliced
- 1 cup white mushrooms, sliced
- 4 oz choice of protein (we used pork)
- 1 table spoon sesame oil
- 2 tablespoons soy sauce
- pepper
- salt
Directions:
- Cook potato starch noodles according to package and set aside to drain.
- In a pan, cook pork or choice of protein with a little bit of oil. As the fat on the pork will give more depth of flavor to the remaining ingredients.
- Add onions, carrots, mushrooms, garlic and cook until cooked through. Let cool.
- In a big bowl, add noodles, cooked toppings, soy sauce, and sesame oil. Pepper and salt to taste.
