Korean Glass Noodles (Japchae)

Makes 4 servings 


Ingredients:

  • 4 oz sweet potato starch noodles (dangmyeon)
  • 4 oz spinach
  • 4 oz carrots, julienned
  • 3 garlic cloves, minced
  • 1 medium onion, sliced
  • 4-5 dried shiitake mushrooms, rehydrated, sliced
  • 1 cup white mushrooms, sliced 
  • 4 oz choice of protein (we used pork)  
  • 1 table spoon sesame oil
  • 2 tablespoons soy sauce
  • pepper 
  • salt

Directions:

  1. Cook potato starch noodles according to package and set aside to drain.
  2. In a pan, cook pork or choice of protein with a little bit of oil. As the fat on the pork will give more depth of flavor to the remaining ingredients.

  3. Add onions, carrots, mushrooms, garlic and cook until cooked through. Let cool.

  4. In a big bowl, add noodles, cooked toppings, soy sauce, and sesame oil. Pepper and salt to taste.
