Hong Kong-Style Pasta Soup

 Here is another soup recipe to warm bellies! 

4 servings


Ingredients:

  • 1½ cup small pasta (we used orzo here)  
  • 1 Tbsp cooking oil
  • 1½ cup carrots
  • 1½ cup nappa cabbage 
  • 4 cups chicken or vegetable stock
  • 2 chicken thighs (de-skinned)
  • salt and pepper to taste
  • 4 garlic cloves
  • 2 slices of ginger 
  • 1 Tbsp sesame oil

Directions:

1. Cook pasta according to instructions, drain, and set aside. 

2. In a soup pot, heat cooking oil over medium heat and cook vegetables until fragrant. 

3. Add stock, chicken, garlic, ginger and bring to a boil and let simmer for at least 30minutes. 

4. Once thoroughly cooked, take out chicken and shred and put back into soup.

5. Stir in pasta and sesame oil. Salt and pepper to taste. Serve hot.
