Pasta Salad

This recipe is one of our go to recipes for potlucks. It's easy, colorful, customizable and delicious! Again, this is one of our recipes where exact measurements and ingredients aren't that important. This recipe is usually the standard and we add whatever extras we find around in the house (see optional at the end). Use whatever ingredients you like and have on hand to create your own recipe that you will surely be making over and over again! Let us know how what you added to this pasta salad. We would love to experiment with new ingredients! And our favorite part of this recipe? Minimal cooking.  


Makes 8 servings 

Ingredients:

  • 1 box tri-colored spiral pasta 
  • 3-4 medium sized bell peppers
  • 1 onion, thinly sliced
  • one 12oz jar/can of artichoke hearts ( + 2 tablespoons of liquid) 
  • 1/2 cup Italian dressing
  • 16oz mozzarella cheese, cubed 
  • ham, cubed 
  • chopped scallions 
  • salt
  • pepper 

Directions:

  1. Cook pasta and set aside to drain and cool. 
  2. Cut remaining ingredients into bite sized pieces 
  3. In a large bowl, add all ingredients and toss until combined. Salt and pepper to taste. 
  4. Best to chill in fridge for at least an hour before serving to let flavors marinade. 
Optional:
  • drizzle balsamic vinegar atop for extra flavor before serving 
  • don't like artichoke hearts? Use olives and olive juice instead. 
  • Make things cheesey by adding other cheeses like smoked mozzarella, gouda or cheddar 
  • Up the sweetness by adding fresh cherry tomatoes, sectioned oranges, berries or grapes 
  • Make it hot with some chopped jalapenos or chili peppers 
  • Soak the thinly sliced onions in water to lessen the kick from the raw onions
