
Carrot Ginger Soup
Makes 2-3 servingsIngredients:
- 1 tbsp vegetable oil
- 1 small yellow onion
- 4 cloves garlic
- 2 ½ cups shredded carrots
- 2 in. ginger
- 2 ½ cups vegetable broth
- ½ tbsp vinegar
- Salt and pepper to taste
Directions:
- Heat oil in a medium pot over medium heat. Sautee onions until soft.

- Add in garlic, carrots, and ginger, cook for about 10 minutes, stirring occasionally.

- Add in vegetable broth and vinegar. Cover and simmer for ~20-30 mins, until carrots are very soft
- Set aside, let cool.
- Blend everything in blender until smooth

- Return to pot to reheat, add salt and pepper to taste
