Carrot Ginger Soup

 Carrot Ginger Soup

Makes 2-3 servings

Ingredients:

  • 1 tbsp vegetable oil
  • 1 small yellow onion
  • 4 cloves garlic
  • 2 ½ cups shredded carrots
  • 2 in. ginger
  • 2 ½ cups vegetable broth
  • ½ tbsp vinegar
  • Salt and pepper to taste

Directions:

  1. Heat oil in a medium pot over medium heat. Sautee onions until soft. 


  2. Add in garlic, carrots, and ginger, cook for about 10 minutes, stirring occasionally.


  3. Add in vegetable broth and vinegar. Cover and simmer for ~20-30 mins, until carrots are very soft
  4. Set aside, let cool.
  5. Blend everything in blender until smooth

           
        
  6. Return to pot to reheat, add salt and pepper to taste
