Ham and Broccoli Baked Rice

This is so easy to make, does not take much time. You can also use leftover rice, but you'd have to add some water to the leftover rice if it is too dry.

Makes ~3 servings

Ingredients:

  • 1 cup rice, uncooked
  • 1 ½ cup broccoli florets; blanched
  • 4 tbsp butter
  •  medium onion; diced
  • 2 tbsp all-purpose flour
  • ½ tsp salt
  • 1/8 tsp pepper
  • 2 cups milk
  • ~3/4- 1 cup cooked ham; sliced or diced
  • ¾ cup shredded mozzarella cheese

Directions:

  1. Cook rice in rice cooker or according to instructions
  2. Preheat oven to 350F
  3. In a saucepan, melt butter over medium heat, add in onion and sauteed until tender


  4. Mix in flour, until well combined
  5. Add in milk ¼ cup at a time, stir well until slightly thickened. Stir in salt and pepper


  6. Turn off fire
  7. In a lightly greased 8in. pan, layer the rice then broccoli. Pour the sauce over the broccoli evenly, then top with ham and then cheese.
              
  8. Bake, uncovered, at 350F for 20 mins
  9. Serve when hot
