Fried rice is basically cooked rice that has been stir fried in a pan or wok. Often, toppings such as eggs, meats and/or vegetables will be added.
Growing up, my parents cooked fried rice to get rid of leftovers. It's an easy way to give life to random leftovers left in the fridge that no one really wants to eat anymore or use up ingredients that may not necessarily be enough for an entrée or use up ingredients that may be expiring soon! Not to mention, it's an easy one-pot (or wok) meal for lazy days. Whatever the reason, fried rice is a very customizable recipe that can be tailored to anybody's needs and wants! Happy eating!
2-3 servingsIngredients:
- 3 cups cooked rice
- 2 eggs
- 2 links of Chinese sausage (or other type of sausage/meat)
- half onion, diced
- 1/2 cup scallion, diced
- salt and pepper to taste
- cooking oil
Directions:
- Mixed cook rice with raw eggs and set aside. By adding raw eggs to the cooked rice directly, this will allow the rice to thoroughly absorb the egg flavor and its beautiful golden yellow color when cooked.
- Cut up sausages, scallion, and onions. This is what I had on hand today, but use whatever ingredients you have. Make it fancy with more ingredients or skip these toppings entirely. Sometimes simplicity is best.
- Heat a pan with cooking oil over medium heat. Add sausage. When sausage is about ~80% cooked, add onions. This will ensure the sausage is thoroughly cooked before adding the egg rice mixture and not overcook the onions.
- Once the sausage is thoroughly cooked through, add egg rice mixture and cook until dry. Make sure to keep stirring to prevent burning.
- Once the egg is cooked, turn off heat and add scallion. This will retain the scallions' texture while giving the fried rice a taste of freshness. Season with salt and pepper to taste and serve hot.
