Who said making stir-fried noodles is hard? Oyster sauce packs a punch of flavor and is also the secret to this stir-fried udon. We used chicken, onions and Chinese broccoli (gai lan or kai lan) but use whatever ingredients you have on hand.
Makes 2 Servings
Ingredients:- ~500g udon
- 1 deboned, skinless chicken thigh, sliced
- 1/2 onion, sliced
- 1/2 lb Chinese broccoli (gai lan or kai lan)
- 2 tablespoon oyster sauce
- 1 tablespoon sweet soy sauce
- cooking oil
- ground pepper to taste
Directions:
1. Slice chicken and onion to same thickness as Chinese broccoli. This will ensure even cooking.
2. In a heated pan with cooking oil, stir-fry chicken until almost cooked. Add onions and Chinese broccoli to continue cooking.
3. Once toppings are cooked through, add udon and toss until combined with toppings and oil.
4. Add soy sauce and oyster sauce. Toss and stir-fry until evenly coated. Serve warm.
