Frittatas are definitely on our top 10 favorite things to make, because they are 1) versatile- you can add just about anything you have in the house, vegetables or meats; 2) has eggs and cheese- yummiest things; 3) quick and easy to make; 4) can be frozen and reheated later on.
For our frittata recipe here, we threw in broccoli, cherry tomatoes, and cheddar cheese, because that's what we have in the house. Feel free to customize it any way you like!

- 6 eggs
- Or 4 whole eggs + 4 egg whites
- 2/3 cup milk of choice
- 3 cloves garlic; minced
- 1/8 tsp salt
- 1/8 tsp black pepper
- 1/8 tsp paprika
- ½ cup shredded cheese of choice; divided
- ¾ cup broccoli florets
- ½ cup grape tomatoes
Directions:
1. Preheat oven to 400F
2. Chop broccoli florets into bite size pieces, and the tomatoes in halves; set aside. If using fresh broccoli, blanch them ahead of time. We used frozen ones here, so we defrosted them slightly and threw them straight in.
3. Beat eggs and milk with a fork until well mixed


4. Add in minced garlic, salt, pepper, and paprika

5. Pour egg mixture into lightly greased 8 in. cast iron skillet or baking pan
6. Sprinkle half of shredded cheese into eggs
7. Add in broccoli and tomatoes evenly around in skillet and top with remaining cheese

8. Bake at 400F for 20 minutes. Let it cool down slightly and then cut into 5 pieces
