For those of us who love peanut butter AND chocolate, this is the perfect treat!
Makes 24
Ingredients:- ½ cup butter; softened

- ½ cup creamy peanut butter
- 1/3 cup granulated sugar
- 1/3 cup light brown sugar
- 1 egg
- ½ tsp vanilla extract
- 1 ¼ cup all-purpose flour
- ¾ tsp baking soda
- ¼ tsp salt
Filling:
- ¾ cup milk chocolate chips
- ¾ cup semi-sweet chocolate chips
- ¼ cup milk
- 1 tsp vanilla extract
Directions:
- Preheat oven to 325°F
- Cream butter, peanut butter, and sugars until creamy. Mix in egg and vanilla extract until smooth

- Add four, baking soda, and salt all at once. Stir until soft dough forms
- Press dough into lightly greased mini cupcake tin

- Bake at 325°F for 15 mins.
- When cookies are done baking, immediately make an indent in center (with an end of rolling pin), do not remove from tin yet

- While cookies are cooking, melt all filling ingredients together in double boiler
- Fill cookies with chocolate filling and remove from cupcake tin when fully cooled.
