Fudge Puddles

For those of us who love peanut butter AND chocolate, this is the perfect treat!

Makes 24

Ingredients:

  • ½ cup butter; softened
  • ½ cup creamy peanut butter
  • 1/3 cup granulated sugar
  • 1/3 cup light brown sugar
  • 1 egg
  • ½ tsp vanilla extract
  • 1 ¼ cup all-purpose flour
  • ¾ tsp baking soda
  • ¼ tsp salt

Filling:

  • ¾ cup milk chocolate chips
  • ¾ cup semi-sweet chocolate chips
  • ¼ cup milk
  • 1 tsp vanilla extract

Directions:

  1. Preheat oven to 325°F
  2. Cream butter, peanut butter, and sugars until creamy. Mix in egg and vanilla extract until smooth
            

  3. Add four, baking soda, and salt all at once. Stir until soft dough forms
  4. Press dough into lightly greased mini cupcake tin

  5. Bake at 325°F for 15 mins. 
  6. When cookies are done baking, immediately make an indent in center (with an end of rolling pin), do not remove from tin yet
            

  7. While cookies are cooking, melt all filling ingredients together in double boiler
  8. Fill cookies with chocolate filling and remove from cupcake tin when fully cooled.
