Fresh Tomato Pasta Salad

This easy pasta salad only requires a few ingredients. Make it as is or jazz it up with extra toppings like shredded chicken or roasted vegetables. Don't have certain ingredients? Just substitute it for something else! Unlike our other recipes, this recipe does not have any concrete measurements listed, well because this is a very customizable recipe! Use this as a base recipe and let your creativity run wild! Customize this recipe with whatever ingredients you have on hand and just keep adjusting the taste to your liking. However you make this pasta salad, it will surely become one of your go to recipes! Happy eating! 

Yield: 6-8 servings 

Ingredients:

  • 1 box of pasta (pasta shape of your choice)
  • garlic, minced(the more the merrier! We used about 5-6 cloves)
  • grated parmesan (to taste) 
  • salt and pepper to taste
  • fresh cherry/grape tomatoes 
  • dry herbs of choice (we had dried oregano and coriander on hand) 
  • olive oil 

Directions:

  1. Cook pasta according to instructions on package. Drain well. 
  2. In a pan, heat olive oil over medium heat. Cook garlic until fragrant but before burning. 
  3. Toss in pasta and herbs of choice. Season with salt and ground pepper to taste. 
  4. Once heated through, turn heat off and mix in grated parmesan. The warmth of the pasta should still be able to melt the cheese. If not, turn on the heat just long enough to melt the cheese. Before serving, toss in fresh cherry/grape tomatoes.  
  5. Serve warm or at room temperature 
Other Notes:
-  Don't have any dry herbs on hand? Fresh herbs will work as well! Just remember when using fresh herbs, flavors are more delicate than their dried counterparts
- Instead of using regular salt and pepper, try using garlic salt for more garlicky goodness! Even better, roast your garlic ahead of time in the oven until it turns black for that delicious tangy and sweet flavor! 
- Make this recipe more filling by adding some protein. Some ideas include shredded chicken, tofu, beans, or toasted nuts 
- Make this recipe more filling by adding veggies or avocado! Some delicious additions include grilled/roasted vegetables, bell peppers, broccoli florets, zucchini 
- Make it interesting by adding some sweetness to offset the garlicky and cheesiness by adding fresh fruits like blueberries or seedless grapes
