Berries Bread Pudding

 9 x 13 pan (20 x 2.5 in squares)

Ingredients:


  • 1 tbsp butter
  • 1/3 cup granulated sugar
  • 5 eggs
  • 1 1/2 cup granulated sugar
  • 2 cups milk
  • 1 ½ heavy cream
  • 2 tsp vanilla extract
  • 4 cups mixed berries
  • 9 cups white bread (~12 slices); cut into 1 inch cubes
  • Optional: 1 cup Cookies, cake, muffin crumbs (makes it so much better!)

Directions:

  1. Preheat oven to 375°F
  2. Butter 9 x 13 in. baking dish & coat w/ 1/3 cup sugar
  3. Cut strawberries into similar size to blueberries
  4. In large bowl, whisk eggs w/ sugar & vanilla
  5. Add in heavy cream, milk, & whisk until well blended
  6. Place a single layer of bread pieces in prepared pan, sprinkle with cookie/cake/muffin crumbs, if using (this gives some extra surprise sweetness and flavor). 
  7. Pour half of custard mixture over bread, let sit for about 15 minutes to let bread absorb the liquid
  8. Spread 2/3 of berries over the first layer of bread. 
  9. Top berries w/ remaining bread. Pour in remaining custard mixture, and top w/remaining berries
  10. Let sit for 20 mins to let the liquid get absorbed
  11. Bake at 375°F for 1 hour
  12. Let cool completely
