Banana Cake Bars

9 x 13 pan 

Ingredients:

  • ½ cup (1 stick) unsalted butter
  • ¾ cup sugar
  • ½ cup light brown sugar
  • 2 eggs
  • 1 cup sour cream
  • 1 ½ tsp vanilla
  • 2 ¼ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg 
  • 2 cups mashed bananas, about 3 bananas 

For Frosting:

  • ½ cup (1 stick) unsalted butter
  • ½ pkg (4 oz.) cream cheese
  • 1 ½ cups powdered sugar
  • Pinch of salt
  • 1 ½ tsp vanilla 


Directions:

1. Preheat oven to 350 F. Grease a 9 x 13 pan and set aside

2. In large bowl, cream together butter, granulated sugar, and brown sugar. Add in eggs, sour cream, and vanilla. Mix until well combined

3. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.

4. Slowly add flour mixture to butter mixture, mix until smooth

5. Fold in mashed bananas and mix until just combined

6. Bake at 350F for 20-25 minutes, until toothpick comes out clean 

7. Spread frosting over cake when cooled. Store in refrigerator until ready to serve
