Banana Bread Muffins


Wet ingredients:
4 eggs
2/3 cup water
1 cup oil (or butter or alternative baking fat)
Mashed bananas (the more the merrier, but we used 4 small ones ~2 cups mashed)

Dry ingredients:
2 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
3 1/2 cups all purpose flour 
sweetener (sugar, honey, syrup, etc. This can be anywhere from 1/4 cup to 2+ cups. The amount will depend on how many bananas you use, how ripe the bananas are, if you're adding any additional add-ons, and how sweet you like your breads/muffins. The more ripe the bananas, the less sweetener you will need. For reference, we used about 1/4 cup honey because our bananas were way overdue!)

Optional add-ons (to be mixed into final batter):
chocolate chips
raisins or other dried fruits
walnuts or other nuts 

Instructions:
1. Preheat oven to 350 degrees Fahrenheit. Grease/prep muffin cups
2. In a big bowl, sift dry ingredients and set aside. In a medium bowl, mix together wet ingredients. Gradually combine wet ingredients into dry ingredients. Mix until just combined.
3. Bake for ~23min for muffin cups or until a toothpick inserted comes out clean. (If using loaf pans, baked ~50-60min)

Yield: ~22 muffins or 2 loaves
